Gluten is the natural protein present in wheat. It is responsible for the texture of bread as we know it. It is the reason behind the elasticity in the dough. But too much gluten can result in a chewy baked product, and with too little gluten, the baked product won’t rise enough. We use a state-of-the-art mill from Ocrim, Italy, to make Prestige Maida with just the right amount of gluten.
A bleaching agent is used to whiten the flour and improve the structure-forming capacity of the flour. Did you know that the European Union have restrictions on the use of flour bleaching agents? We prefer to provide a chemical-free product for your family. PRESTIGE Maida is free of bleaching agents such as chlorine, and peroxide.
Potassium Bromate is another chemical added to the flour to improve rise and elasticity of the dough. Theoretically, bromate is an oxidising agent and should not remain in the final baked product, but we still think it is not safe. We prefer to provide a chemical-free product for your family. PRESTIGE Maida is free of bromates.
